F&P Food Bites – Holly’s Cucumber Pickle

Pickles are like Marmite, you either love them or hate them but here at Fish&Pips we are a big fan! Holly has created a simple cucumber pickle recipe so that we can all make pickles at home. Cure the craving!

Whilst a crunchy French cornichon hits the spot, we also love these softer, sweeter homemade pickles! Perfect with strong cheeses, to jazz up a sandwich, hamburger or barbecued food.

Ingredients: (makes 1 large jam jar full)

  • 1 large cucumber, sliced into thin rounds
  • 1 large white onion, thinly sliced
  • 1 tsp sea salt
  • 300ml cider vinegar
  • 225g light brown sugar
  • 2 tsp mustard seeds
  • 1/4 level tsp ground cloves or 4 whole cloves

Method:

  1. Put the cucumber and onion in a large bowl, add the salt and mix thoroughly. Cover the bowl and leave to stand for a couple of hours.
  2. Rinse the vegetables under cold water, drain and put into a medium sized saucepan. Add all of the ingredients, vinegar, sugar and bring to the boil.
  3. Remove the cucumber and put into the sterilized jam jar.
  4. Continue to boil the liquid until it is reduced to about 2/3rds.
  5. Turn off the heat and leave to cool.
  6. Ladle the liquid into the jar with the cucumber.
  7. Store in a cool, dark place for 2-4 weeks for the flavours to mature.
